Ah, summer in South Carolina. Beach trips, picnics, flip-flops, lightning bugs. Oh, and also mosquitos and scorching temperatures. Did we mention the heat? The struggle is real, y’all, but so is this perfect antidote to even the meltiest days – our seasonal summer chicken salad. It starts with iceberg and mixed greens topped with spicy, smokey mesquite chicken. That’s a good start, but then the summer fun starts: salty feta balances a double-shot of sweet, with fresh strawberries and candied pecans for crunch. Drizzle a dressing of your choice, finish with a dill pickle, and you’ve got yourself a perfect seasonal chicken salad spring/summer situation on that plate. Just add water, y’all!
Seasonal Chicken Salad (Spring/Summer)
A combination of iceberg lettuce and mixed greens topped with our mesquite chicken breast, feta cheese, fresh strawberries, candied pecans a dill pickle and our house vinaigrette dressing.
