The Seasonal Chicken Salad Fall/Winter is back. Ah, winter in South Carolina. Heading up to the mountains for some skiing, cozy fires and warm socks. Hot chocolate for everyone! But also, can we say snow-pocolyse? Just a few flakes and – No school! Lines at the grocery store! The sky is falling! Seriously, the sky is really falling!
The struggle is real for us snow-wary Southerns. But there’s the perfect antidote to even the most snow-pocolyptic day: winter’s seasonal chicken salad. It starts with iceberg and mixed greens topped with spicy, smokey mesquite chicken. That’s a good start, but then the cozy, wintery fun starts: salty feta balances a triple-shot of sweet and tangy, with fresh Granny Smith apples, dried cranberries, and candied pecans for crunch. Drizzle our house vinaigrette or a dressing of your choice. Finish with a dill pickle, and you’ve got yourself a perfect winter feast on that plate. Just add fuzzy socks!
