Here is a not-at-all-complete list of things that make me want to eat chicken pot pie: rainy days, dinners with friends, watching the news, reading about cold places, remembering my grandma, snuggling my sons, extra innings of t-ball, Sunday afternoons, anything by Simon and Garfunkel, coffee cups with huge handles, that hymn “It is well with my soul,” a fresh semester of school, old people holding hands, coming home from a trip away, and the smell of a campfire.
It’s just….good. Capital G Good. Chopped chicken, carrots, peas, green beans, corn, onions, and potatoes in a creamy sauce, tucked into a flaky buttermilk crust. Want to pass along the goodness? Serve it at your next meal, stick one in your freezer, deliver it to the door of a friend. What makes you want to eat chicken pot pie?
